Frittering Away My Time

Yesterday I picked these zucchinis from the garden.  Some were really big and I don't enjoy them so much.  Last year, I dried the big ones in my food dryer, but I really didn't get too excited about them.  I grated that really big one on the top and got about 32 oz. of grated zucchini as shown below.
I have a really cool attachment that fits on the head of my Kitchen-Aid mixer.  It worked fast and easy.

I wasn't in the mood for making any zucchini bread, but I did decide to make some fritters, that I used a favorite potato pancake recipe to make.  I just took the zucchini instead of grated potatoes. And it doesn't look all that great, because they are all kind of stacked on top of one another, but we all loved them.

Here is what I did:

Zucchini Pancakes or Fritters

16 oz, ( 2 cups of grated zucchini, try to squeeze out the moisture with a paper towel.
1/2 chopped onion or to your own taste
1/2 c. or more, if you like of Romano cheese.  I used the shaker kind and it had asiago and Parmesan cheese in it.  It was what was in the fridge. 
1/2 c. flour
2 beaten eggs
spices as you like them (I like a lot!)
Mix it all up.  If some liquid forms, drain it out.  Then scoop some out with a spoon and put in a oiled hot fry pan.  I used olive oil, because that is all I use.  Flatten the fritter or pancake and fry till they are golden to slightly darker.  I wanted to make sure the egg was cooked.
Spence put catsup on his and I enjoyed them plain.  But all 3 of us really liked them alot.

Now I only have about 10 more zucchini to figure out what to do with.  Zucchini ice cream anyone????:

Red Cabbage Day

Well, today was the day to start cooking and freezing my red cabbage.  I had Spence pick the 6 biggest heads and then I started on them this morning.  The cabbage filled 3 large pots.  And I chopped and cooked most of the morning.  After cooling them down I put them in their containers and stuck them in the big freezer.  Now I have 2 more Saturdays of the same process.  For those of you who like German red cabbage I put a recipe on an earlier post.  In Poland they make a salad of red cabbage.  It is sort of a cole-slaw type salad but in a vinegar type sauce rather than a white cole-slaw type.  I will have to try that too.  At the "This is the place Monument" Spence had a Red Cabbage cole-slaw and he loved it.  I will try to figure that out also. 
And then I got the dehydrator out and started drying some things.It was a busy day and now I am tired...

A Recipe for Guacamole

GUACAMOLE OLE’


1 ripe avocado in halves
½ c. finely chopped tomatoes
2 T. chopped cilantro
2 cloves minced garlic
2 T fresh lime juice
Salt and pepper

Put all in plastic bag, seal and smush it. Cut bottom corner of the plastic bag and squeeze it all into bowl. Serve with chips. Easy, quick and fairly clean.

Favorite Sugar Cookie Recipe From a Cookie-holic

Do you all have a favorite sugar cookie recipe?  Well, here is mine.  It's a good one!

Sonja’s favorite Sugar Cookie Recipe


1 c. butter
2 c. sugar
2 eggs
1 c. sour cream
1 t. vanilla or almond flavoring
1/4 t. soda
4 t. baking powder
4 ½ c. flour

Mix together and roll out. Bake at 350 degrees for 5-7 minutes.

Buttercreme Frosting for Sugar cookies

½ c. butter or margarine
½ c. shortening
1/4 t. salt
1 ½ t. vanilla
5 ½ c. powdered sugar
1/4 c. of milk
Cream butter, shortening, add salt and vanilla. Add sugar, 1 cup at a time. Then the milk. Beat till light and fluffy. Add food color if desired.

A Nummy Polish Recipe

I tried to post this on The Pioneer Woman's Tasty Kitchen Site, but it kept rejecting everything I did to put in the recipe.  So I am posting it here so as not to feel like a complete failure...  It really is nummy and the credit goes to Theresa Ulfik, my Polish relative's wife, who is a really good cook.

Teresa Ulfik’s Polish Salad.

Ingredients (every ingredient should be put in the form of a layer)
1 can pineapple cut into pieces ( I used Pineapple tidbits, drained)
1 can drained and rinsed kidney beans
The white part of a leek cut into pieces. (I sliced it)
a layer of mayonnaise
1/3 lb.of deli turkey or ham cut into thin stripes (Omi can leave out)
2-3 carrots (boiled) cut into thin stripes ( I used boiled baby carrots about 10-12 of them)
2-3 stalks of celery, chopped
2 cloves of mashed garlic
can of corn (I used frozen because I had no canned corn)
another layer of mayonnaise
4 grated hard-boiled eggs (I just sliced them and put them on top)

Mix it when you serve it, but it is prettier in the layered form in a clear serving bowl till ready to eat.
